1 cup grated ginger
1 heaping cup chopped mint
½ cantaloupe melon, peeled and cubed
1 cup sugar, or sweetener of your choice
6 cups hot water
Place ginger and mint in a large pot or bowl and cover with hot water. Let step for 10 minutes. Place melon in blender and blend until smooth (no liquid added). Pour melon into ginger / mint mixture along with the sugar. Stir, and let step an additional 10 minutes.
Strain, bottle, and chill. Serve over ice.
