1 ½ cup cashew, soaked
1 cup coconut meat (white from inside a young coconut)
½ cup organic coconut milk
½ cup maple syrup
1 tsp. vanilla paste
1 tsp. pure vanilla extract
1 tsp. vanilla powder
¾ tsp. salt
½ cup coconut oil, melted
Jackfruit: 1 cup whole + ½ cup chopped small + more for garnish
2 tbsp. fresh lemon juice
¼ tsp. organic banana cream flavoring
Blend all ingredients, (except the coconut oil, the chopped jackfruit, and the jackfruit reserved for garnish), until smooth. Pour mixture into ice cream maker and process according to manufacturer’s directions. While the ice cream is churning add the ½ cup of chopped jackfruit.
When you are ready to serve the ice cream, garnish with the remaining jackfruit.
