Jerk Tofu

1 package extra firm tofu, cubed

1 ½ tbsp. dry jerk seasoning (

3 cloves garlic, crushed

1 tbsp. chopped fresh thyme leaves

3 scallion, greens and white, chopped

1 ½ tbsp. Braggs amino

2 tbsp. coconut oil, melted

1 tbsp. grated fresh ginger

½ cup orange juice

1 lime, juice

1 tsp. crushed sage

3 fresh culantro leaves

1 cup mixed vegetables (e.g. sweet peppers, broccoli)


Combine all ingredients except, tofu and mixed vegetables, into a marinade. Gently rub the marinade onto the tofu cubes and let marinate for at least 4 hours or overnight.   When ready to cook, skewer the tofu alternating with the vegetable mix of your choice. Broil or grill until caramel brown and all sides. While cooking baste with the remaining marinade.
