One Pan Pasta Dinner – GF

½ package of gluten free pasta, cooked according to directions

¼ piece small red onion, sliced thin

2 cups canned organic tomatoes, diced with juice

½ celery stalk, thinly sliced

½ head anise / fennel, sliced fine

½ tsp. pasta sprinkle (

¼ tsp. sage, dry crushed

½ tsp. fresh tarragon, chopped fine

¼ tsp. rosemary, dry

¼ tsp. marjoram, dry

4oz silken tofu

¼ + ½ cup water

1 ½ tbsp. coconut oil

¾ tsp. salt

½ tsp. coconut sugar

¾ batch delightful beefless ground recipe


Blend together tofu and ¼ cup water, and set aside. Heat oil and sauté onion, tomatoes, celery for 3 minutes, turning. Add sage, tarragon, rosemary, marjoram, and salt, and cook for an additional minute. Add fennel, pasta sprinkle, tofu, and ¼ cup water, and bring to a boil. Reduce heat and let simmer until sauce thickens. Do not allow to get dry; if its too dry add remaining ¼ cup of water.   Servings: 2-3
